Dried apple chips: an easy recipe using a dehydrator

Ingredients

  • Apples at will (including mixed varieties)

  • Lemon juice

  • Cinnamon stick (optional)

Preparation of apple chips

Wash and clean the apples, removing the core and slicing them to a thickness of about 4 mm. If the apples are organic, leave the skin on, as it is rich in vitamins and fibre.

To prevent the slices from turning brown, you can:

  • Dip them briefly in water and lemon juice, or

  • Place them directly in the baskets of the dryer once it has been switched on; in this case, oxidation only affects the colour and not the taste.

Dry the slices thoroughly with a clean tea towel and arrange them in the baskets in a single layer, without overlapping them.

Drying

To obtain perfectly crisp apples:

  • With Biosec dryer: programme P2 until completely dry (approximately 12 hours).

  • With other dryers: temperature 50 °C, until the slices are dry and crispy.

  • For a more intense and crunchy texture, you can continue for an extra 1-2 hours.

Storage and flavouring

Put the chips away still warm in an airtight glass or tin jar. Add a cinnamon stick inside for a delicate aroma without overpowering the natural flavour of the apples.

Dried apple chips can be eaten as a snack, added to breakfast, or used as a crunchy topping on yoghurt, porridge or desserts.
