The great challenges of drying: figs

Want a pocket-sized supply of calcium, iron and potassium? Dried figs are perfect for satisfying your hunger and providing a good calorie boost when you need it most during the day!

Being difficult to dry means that they will be a little slower in the process or that they may be more prone to mould and oxidation.

Ingredients
Figs galore (medium size and perfectly ripe)

Procedure
Cut them in half (or quarters or eighths) and place them in the baskets with the flesh facing upwards (because this is where the water will come out). The figs are ready when the consistency is uniform throughout and the fruit has stopped shrinking and thinning over time.

Programme
t4 for approximately 24-30 hours if quartered, 36-40 hours for halved figs.

As always, store in hermetically sealed glass or tin jars.
