17.02 | Drying course in Bellaria-Igea Marina with Chef Dalicandro

The courses of the Chef Dalicandro around Italy, to spread the culture and use of the dryer. On 17/02, it will be the turn of Bellaria-Igea Marina (RN), at the Agriturismo Fattoria Belvedere. An intense 4-hour lesson to discover and explore the potential of this tool, understand the drying process, and taste some of the products made.

The different drying processes will be discussed, from homemade powders to dried meat, from fruit wafers to fruit leather, from yoghurt to spreadable cheese, mock frying, fruit and vegetable candying and much more.

We will understand how to choose the right dryer, the differences between a vertical and a horizontal dryer and their opportunities and criticalities.
