Temperatures around 40-42°C are ideal for more delicate processing, such as aromatic herbs or flowers, where the integrity of the petals and the intensity of the volatile essences must be preserved. The range between 45°C and 50°C is the perfect balance point for most common vegetables and fruit (apples, pears, courgettes, carrots).
Exceeding 55-60°C can trigger the phenomenon of case hardening: the outer surface hardens too quickly, creating an impermeable barrier that prevents internal moisture from escaping. The result is a product that feels dry to the touch but which will quickly go mouldy once placed in the pots.
Fruit: sugars and delicacy
Fruit is at its best between 40°C and 50°C. Regularly cut apples and pears dry with excellent results at 45°C. Foods from dense and sugary pulp such as bananas or grapes may require 50°C to overcome the resistance of tissues that tend to retain water. For strawberries and small berries, patience is a must: moderate and constant heat keeps the bright red colour and natural sweetness alive.
Vegetables: fibre and flavours
For vegetables it is usually between 45°C and 55°C. Take out a slice, let it cool in the air for a couple of minutes and only then check its crispness or how dry it really is.
