Be wary of dried mushrooms that are too white

Dried mushrooms can be found almost everywhere, but it is good to pay close attention to the colour in which they are presented. Indeed a mushroom dried according to a careful and respectful process the time required for drying is generally one yellowish colour. When you find mushrooms too white means that they were processed at very high temperatures which tend to alter its organoleptic and nutritional properties. The Biosec has a programme automatic specific to dry mushrooms (P2 Mushrooms and thin slices) that reaches a maximum temperature of 45 degrees in an 18-hour cycle.
