This guide to natural food drying stems precisely from this: from the desire to preserve well, reduce waste and respect raw materials without distorting them, and to follow seasonality to avoid buying expensive, out-of-season industrial products.
Drying does not simply mean removing water. It means accompanying a foodstuff towards a new stability, retaining its aroma, colour, taste and organoleptic qualities as much as possible. This is why the method matters so much. Temperature, air circulation, thickness of the cut and type of food make the difference between an approximate result and a well-preserved product, pleasant to use and consistent with a natural and conscious cuisine. Natural food drying is based on an elementary physical principle: reducing the free water present in food to inhibit microbial activity and enzymatic spoilage processes. It is a technique that has its roots in human history, but today requires a more precise approach than one might think, especially if one is looking for consistent and hygienically safe results.
Not all foods react in the same way. A thinly sliced apple behaves differently to a plum or a fig split in half, just as a mushroom has different requirements to a sage or basil leaf. The first rule, therefore, is to observe the structure of the food. The more watery it is, the more important it will be to distribute the cut evenly and to carefully manage the balance between time and temperature.
The second point concerns the quality of the raw material. A common mistake is to think that the dryer can recover products that have already partially deteriorated. On the contrary, drying is a process of concentration: if we start with a mediocre, non-organic fruit, we will concentrate its defects. Instead, it is better to start with healthy fruit and vegetables, ripe at the right point, carefully cleaned and processed within a short time from harvest. Seasonality, in this sense, is a real advantage: produce harvested at its balsamic moment offers the highest aromatic and nutritional yield, guaranteeing superior satisfaction in the final dish.
When talking about natural drying, many people still think exclusively of exposure to the sun or makeshift solutions over radiators. Although these practices are linked to tradition, they rarely guarantee the parameters of hygiene and uniformity needed today. Dust, varying ambient humidity, insects and temperature changes can seriously compromise preservation and health.
Truly natural drying, in the modern sense of the term, is a gentle and strictly controlled process. The aim is never cooking the food, which would change its molecular structure, but a progressive accompaniment towards dehydration by means of temperature-controlled air. In this context, the logic of horizontal air flow, the heart of the Biosec drying system, represents technical excellence. Unlike economical vertical systems, where the air rises from below, saturating the trays with moisture and forcing them to be constantly rotated, the horizontal airflow invests each tray identically and simultaneously. This avoids odour mixing and ensures that each slice dries with the same precision.
For those in the professional sector, this technology is indispensable. If the end product is to be standardised for sale, reliable and repeatable parameters are needed. Heat management is at the heart of the whole natural food drying guide. At what temperature do you dry? The correct answer is that it depends on the biological nature of the food and the desired end result. Too high a temperature speeds up the process but risks “caramelising” the sugars on the outside, creating a crust that traps moisture in the heart of the food, eventually leading to mould. Too low, on the other hand, could encourage oxidation before the food is dry.
For fruit and vegetables, one usually works between 50°C and 55°C, a range that preserves the natural colour and maintains thermolabile vitamins. Those who follow a RAW or raw diet, on the other hand, prefer temperatures below 42°C. Aromatic and medicinal herbs, rich in volatile essential oils, require even more gentle temperatures (around 40°C) in order not to lose their precious olfactory identity.
Cutting also plays a decisive role. Regularity is the enthusiast's true ally. Uniform slices, preferably between 4 and 6 millimetres, allow the air to work evenly. If the slices are of different thicknesses, there is a risk of shrinking ready pieces together with others that are still moist, putting the entire jar at risk.
Time is never a rigid parameter, but an interval influenced by the variety of the product, the degree of ripeness, the humidity of the external environment and the total load of the machine. For this, observation remains the best tool: drying is over when the food no longer changes consistency and no longer shows any traces of moisture in the core.
The versatility of modern drying is almost unlimited. Fruit, vegetables, mushrooms, herbs, chillies and edible flowers are timeless classics. Apples, pears, bananas, figs and plums make it possible to create healthy snacks for children or ingredients for pastries. Tomatoes, courgettes, aubergines, onions and carrots can be reduced to a powder to create homemade vegetable stock cubes, free of preservatives and glutamate. Foods such as meat and fish, processed at the right temperatures to avoid food safety problems, are also excellent as snacks for furry friends: a great pet food for dogs and cats.
Aromatic herbs deserve special attention. If harvested early in the morning, after the dew has evaporated, and dried immediately, they retain an aromatic power superior to any industrial product. For those who produce herbal teas or blends for the catering trade, the difference in quality is evident from the first taste.
There are also advanced and professional applications. Drying is the main tool for the farms who want to turn surpluses into added value, creating lines of gourmet products, vegetable flours or crispy snacks that optimise logistics and expand the commercial offer throughout the year.
A well-dried food must be free of residual moisture perceptible to the touch. However, the final texture is not the same for everyone. An apple slice may remain slightly pliable (thanks to sugars and pectins), while a pepper or carrot should become stiff and tend to break when bent. Mushrooms should be light and “sound” dry when shaken.
Visual and tactile control is crucial. If you press the centre of a slice and still feel a certain “cold” tenderness, it means that water is still present. In case of doubt, the Tauro philosophy is clear: there is no such thing as too dry. It is always better to prolong the process by a few hours than to risk losing the harvest through premature interruption.
Once this operation is completed, the equally critical packaging phase follows. The product should not be left to cool in the air to prevent it from re-absorbing moisture from the air, but should be sealed while still warm in its destination container. Glass containers with an airtight seal are the best choice, to be stored in the dark if possible.
One of the most common mistakes is haste, which leads to raising the temperature too high in the hope of shortening the time. This method often produces products that are hardened on the outside and moist on the inside, destined to deteriorate quickly. Drying is a process of patience.
Another frequent mistake is overcrowding the shelves. Overlapping slices prevent air from circulating properly, creating damp areas and slowing down the whole cycle. An orderly, non-overlapping distribution is not just an aesthetic quirk, but a technical necessity for energy efficiency.
Attention to initial preparation is often underestimated. Washing vegetables and not drying them well before slicing means forcing the machine to consume energy just to evaporate the water from washing. The homogeneity of the cut, as already mentioned, is also a pillar that cannot be ignored if one aims for quality.
Finally, switching off the dryer overnight to “save money” is counterproductive: the food is partially rehydrated, the total time is extended and the organoleptic quality deteriorates significantly. Modern dryers are designed to stay on safely and with minimal consumption, similar to that of a light bulb.
