Dried persimmon and dark chocolate swirls

Sweet, soft and naturally mouth-watering: these turnovers are perfect as a snack, dessert or small homemade gift idea. When dried, the persimmons become a flexible and surprising base, ideal for combining with dark chocolate.

Ingredients

To make the swivels you will need:

  • about ten very ripe persimmons

  • dark chocolate, in quantities of approximately two thirds of the weight of fresh persimmons

  • water, just enough to soften the chocolate during melting


Preparation

Carefully clean the persimmons, remove the large seeds and create a homogenous mush. You can help yourself with a blender or simply use a wooden spoon.
Spread the resulting puree on non-stick sheets or baking paper, the size of the dryer's baskets, maintaining a thickness of 5-6 mm maximum.

Drying

Set the dryer:

  • at programme P4 (45°C) if used Biosec;

  • or directly to 45°C if you use another model.

Leave to dry for 36-48 hours, until the sheet is elastic but completely dry.

Stuffing and rolling

Melt an amount of dark chocolate equal to about two thirds of the weight of the fresh persimmons in a bain-marie (or microwave on medium-low power).
During the melting process, add a little boiling water at a time to keep the chocolate soft and easy to spread.
Then spread an even layer of chocolate on the dried persimmon sheet.
Roll the swivel lengthwise, pressing well after each turn to prevent it from opening.
Cut the roll into thin slices and serve.

Variant

For an even richer result, you can:

  • mix with persimmon puree dried fruit grains (walnuts, hazelnuts or almonds);

  • dry the mixture and cut it into bars;

  • then pack them into tinfoil for energy and natural snacks.


Conservation

Transfer the swivels still warm in airtight containers or glass jars.
This little trick is essential to preserve the consistency: dried products, as they no longer contain water, do not create condensation but risk reabsorbing moisture from the air if left to cool too much.
