Why does your pasta break during drying?
The physical process of drying pasta can cause it to break if it happens too quickly. In this case, the initial dehydration only affects the surface, reducing its volume and creating more or less visible micro-cracks, which over time will cause the product to break.
The solution is slow drying, which allows the water to gradually migrate from the inside to the outside, ensuring uniform drying without internal tension.
Biosec Pro + Smart Dry: the solution for perfect drying
The Biosec Pro by Tauro Dryers is equipped with Smart Dry system, which monitors humidity in real time in the drying chamber and works as follows:
– Closes the chamber when humidity falls below the threshold, retaining the vapour to redistribute it over the surface.
– Opens the chamber when humidity is excessive, ensuring air exchange.
This continuous “dialogue” allows the internal water to gradually migrate towards the outside, evitando crepe e tensioni.
