Pavlova is a lady's cake, consisting of a base of meringue, a filled with cream and fruit: And you can do it with a dryer, yes indeed. Here it is.
Ingredients
100 g fresh egg whites (without the slightest trace of yolk)
150 g caster sugar or icing sugar
a few drops of lemon juice
fresh whipped cream
wild strawberries
fresh mint leaves
Procedure
Pour the egg whites into a steel, glass or, even better, copper mixing bowl. Begin beating the egg whites, adding just a few drops of lemon juice, without adding the sugar yet, and starting at a low speed, gradually increasing it. Once all the sugar has been added and the meringue is white and nice and firm, it is ready.
Line the dehydrator trays with baking paper or DrySilk and use a piping bag to form circles. Then pipe a second set of circles along the edge of the first ones to form small baskets.

Programme P4 – Superhot at 68 degrees for 14 hours.
Then remove the meringues from the paper, fill them with whipped cream, add the strawberries and mint leaves, sprinkle with icing sugar and voilà, they're ready!
