What is drying? What can it be used for?
Drying is a process that eliminates the water content from products (fruit, vegetables, mushrooms, herbs, etc.). allowing them to be stored for a very long time. 
Once you remove the water, the main cause of degeneration in substances, the deterioration processes slow down drastically. This blocks the development of mould, parasites and even maturation. The product remains in its unaltered state for a long time, maintaining its organoleptic properties and characteristics intact, perfect for long-term preservation.

What makes Tauro dryers different from others on the market?
Other dryers use a vertical flow of warm air.
The air is partially blocked by the first layer of produce and does not fully dry all the rest. 
Tauro dryers use a horizontal air flow, which evenly reaches all the parts of the products arranged for drying.
This guarantees more even drying, takes less time and consumes less energy.

What is the storage life of dried products?
Drying mushrooms, fruit, vegetables and meat, etc. eliminates most of their water content. Water is the main cause of mould and the main catalyser of the deterioration process of substances.
By eliminating the water through drying we obtain a product that can be stored for more than a year, if kept in an airtight container away from the light (for example in glass jars in a cupboard).

How should dried products be stored?
Dried products can be stored for a long time, especially if they are kept away from the damp, the light and insects, for example in airtight glass jars (the same used for preserves and jams) in a cupboard1. Another optimum solution is to keep the products in a paper bag, like the ones used for bread, inside a plastic bag (of the kind used for freezing food). The paper bag protects from the light and absorbs any excess humidity, while the plastic bag stops humidity and air from entering.

Does drying make fruit and vegetables lose their nutrition properties?
Sun-drying in the sun can effectively harm some of the nutrition principles in products. Even processing with salt or other substances makes products lose many of their properties.
Drying with Tauro dryers almost totally eliminates the products’ water content, while most of the mineral salts and other nutrition principles remain unaltered. Tauro dryers do not therefore alter the food’s properties, but on the contrary allow them to be stored for longer.

What foodstuffs can I preserve by drying?
Many natural products are perfect for drying; dried mushrooms are without doubt the best known but there are many others: fruit, vegetables, spices, herbs, meat and fish...

I don’t have a vegetable garden. Can I use your machines to benefit from the advantages of drying fresh produce that I buy from the shops?
Certainly!
Drying fruit, mushrooms and vegetables, etc. is not just for preserving gluts of home-grown produce, but also for creating new products and new gourmet ideas. You will be able to produce dried mushrooms, make dried fruit compositions for Christmas and dry vegetables for the preparation of soups and tasty innovative dishes.
Buying fruit and vegetables to dry when they are in season means their aromas and flavours remain unaltered even at other times of the year and leads to considerable savings.

How long do the products take to dry on average? How much can I speed up the process with your dryers?
Product drying times depend on various factors and cannot be accurately or exactly calculated.
The main factor is the thickness of the product being dried: every millimetre of thickness takes an average of about 3 – 3½ hours for perfect drying. As thickness increases, so does drying time per millimetre, so the thicker the product the longer the drying process.
Other factors that affect drying times are relative air humidity, external temperature and the product’s water content (tomatoes for example take a very long time to dry because they have a particularly high water content).
Drying with Tauro dryers is up to three or even four times faster than in the open air in the best weather conditions and it allows drying to continue overnight or when the weather is bad.

What is the difference between a dryer and a drying room? Are they the same thing?
No, they are two completely different things: a drying room is a room where the products are put to be dried.
A dryer is a machine that makes drying easier, faster and better.

How big is a Tauro Biosec dryer? How much can it contain?
Biosec comes in different models: the 5- or 6-basket versions (B5 Domus, B5 Silver and B6 De Luxe) measure 27cm x 27cm x 45cm (depth x height x length), while those with 10 or 12 baskets (B10 Domus, B10 Silver and B12 de Luxe) measure 27 x 27 x 82 cm (depth x height x length).
Each basket measures 23 x 34 cm and therefore provides a drying surface of approximately 780 cm². The range therefore goes from B5 (the smallest machine) with its 0.4 m² of drying surface to the B12 model with approximately one square metre of drying surface.
The quantity of product depends on the kind of product and the thickness of the slices.
Around 3 – 4 kg for 10 baskets of thinly sliced (5 mm thick) apples or mushrooms, up to 8 kg or more for ten baskets in the case of whole plums, tomatoes or other products of a similar thickness.
